Today's Menu: Quick & Easy Breakfast for Kids

If you are like me, sometimes it's hard to get your child(ren) on tract in the morning and you end up rushing out the door giving them a granola bar, or an apple to eat on the way to school.  My 8 year old is not a big breakfast person anyways, but I do think it's important for him to start off his day with something healthy and fulfilling.

So here we go, I found 2 quick and easy recipes that he likes, and that I love! The good thing about these recipes: you can prepare them ahead of time!!!

Yogurt Parfait
3 Cups of Yogurt of choice
2 Cups of Granola
2 Cups of Berries (Strawberry, Blueberry, Blackberry or Mixed)
Layer and serve
Yields: 4 Servings

Strawberry Bananna Smoothie
2 Large Banannas
2 Cups of Frozen Strawberries (or substitute differnt berry)
2 1/2 Cups of Milk (Reg, Vanilla or Almond)
(For a sneaky twist - add 1 Tablespoon of flaxseed oil or seeds for extra protein)
They will never know : )
Yields: 4 Servings

There you go, quick and easy, not too expensive, and simply good! Please share some of your breakfast recipes and let me know if you try these two!  Until next time...
