Today's Menu: Extra Virgin Olive Oil

Today I want to share with you the health benefits of cooking with Extra Virgin Olive Oil, but first let's start with a little bit of history.  Olive oil is made from the crushing and the pressing of olives.  It's available in a variety of grades which reflects the degree to which it has been processed.   Extra virgin olive oil comes from the first pressing of olives and it is considered to give the strongest health benefits, delicate flavor and aroma.

Here is a short summary of it's benefits:

1. Lowers blood pressure
2. Reduces risk of heart attack and strokes
3. Inhibits the growth of some cancers
4. Lessens the severity of asthma and arthritis
5. Helps maintain a lower body weight
6. Help controls blood sugar

So if you are not already using olive oil, try substituting it in your daily cooking. You can use it on salads, pasta, fish and really almost anything. Olive oil has been and still is a staple in the diet of many Mediterranean countries for years and is now a staple in my household as well.
